Traditional "Mexican sit-down restaurant"

Growing up in the Southwest and Midwest US in the '90s, I grew to love a certain type of Mexican restaurant that Rio Mirage exemplifies. Think heavy wooden doors with wrought iron and bottle glass inlays, high-backed booths with cushions that swallow you whole, bottomless baskets of chips fresh from the fryer served with mild salsa roja, and giant glasses of ice water.

Recently I've been visiting my dad to help out, and he wanted to take me out to a nice dinner at his favorite local restaurant, so we came to Rio Mirage.

I stopped in ahead of time when they weren't busy to ask about vegan options and got to speak with the owner's husband. The pinto beans, rice, and flour tortillas are all made with lard, but the black beans, corn tortillas, veggie fajitas, and guacamole are vegan suitable.

Dinner tonight was really good! Everything was super flavorable, the vibes were great, the service was friendly. And my margarita was gigantic.

Pros: Friendly service, Simple but delicious vegan options, Gigantic margarita

Cons: Limited vegan options
