My favorite in Bucaramanga - Edit
I've been to several vegetarian and vegan restaurants in Bucaramanga, and this one is my favorite so far. When you walk in, they have a small buffet set up, so you can see the food before you order it. Also, if you don't speak Spanish you can just point to what you want. You can get a little bit of everything on your plate or just the few items that you want, and a separate plate with salad is included. You also get a bowl of the soup of the day and you get to choose between two beverages. All of the food that I tried was delicious. If you get there right in the middle of the lunch rush, don't be shy.... people share tables here. Warmly recommended.

Delicious regional cuisine - Edit
A bright and friendly vegan restaurant in a lovely location opposite the Parque de los Niños. Soup of the day was Mute, a local specialty. Menu of the day was steamed yuca (super saboroso!), yota with tofu in Napoli sauce (another regional dish and delicious), felafel-style patties, pico de gallo and slaw, with white or brown rice. The food was so tasty and fresh, and the service was excellent and very friendly. All for 8.000 pesos! Incredible value. Will definitely go back.
