Park MGM restaurant - Edit
This restaurant is located in Park MGM. It didn't have a huge vegan menu, but was very conveniently located. For brunch the options included tomato bisque, vegan French toast, avocado toast, and strawberry shortcake. I got the French toast which was pretty tasty - it was battered in a mix of banana and tofu which was unique, and had a strong banana flavor

If you look at the regular menu, there aren't any vegan options marked, but there is a three item vegan menu that you can find online (someone already posted a photo here).

Good service - Edit
The vegan menu is small. They are often busy. I ordered take out and at first did not receive the right meal. But they made it right and remade it and offered me banana and coffee while I waited. Make sure to get breakfast potatoes without the Parmesan

Better options elsewhere - Edit
The vegan menu is tiny here, they only have avocado toast or French toast, then a strawberry shortcake for dessert. The French toast was decent, very banana-y. It wasn’t too filling though. I’d recommend trying some place else.
