Good option in L’Aquila - Edit
We spent some days in L’Aquila and were quite surprised just how difficult it can be (in normally quite vegan friendly Italy) to eat vegan. At Pinzimonio, they also didn’t exactly seem enthusiastic to accommodate to our vegan wishes but in the end made some really delicious vegan food! We had different starters (cicoria, crostini with ceci - both delicious, a plain green salad that I wouldn’t recommend as it was quite boring) and as a main pasta alla norma- a delicous rigatoni pasta with a tomato Aubergine sauce. We left full and happy! So overall would definitely recommend😄

Locale in centro carino e personale gentile - Edit
Bisogna avvisare prima che si è vegani ma sono estremamente gentili e disponibili. Ottima la pasta con zafferano e mandorle tostate, a me fecero gli strozzapreti. Tantissime verdure assortite e pizzelle fritte da accompagnamento per antipasto, come dolce macedonia. Per essere in pieno centro dove sono tutti locali turistici con le solite cose non male!

They don’t have vegan labelled dishes on the menu, but they offer some. You can gently ask the staff and they can modify traditional dishes.
