We came to look for food but there were only 2 options that could be made vegan by removing the main ingredient to leave a side salad.

There is maybe 1 maybe 2 piada options here, but that might be OK. This downtown spot has a clean, cheerful and spacious environment, with a few outdoor tables. Specializes in piadas, sort of a cross between pizza and pita sandwich? From specific part of Italy.

Good choice in Pontevedra - Edit
This place reminds me of a little bit of Panera in the United States. Dining room is clean and modern... salads and sandwiches for the most part.
Read moreI ordered one of the salads and it was very good although the portion is too small for my liking. In general I thought the prices were a little high for the quantity of food but eating out is expensive in Spain. Place seems to be popular with teenage girls at lunch time so I guess the prices can't be that bad for locals.
There are many choices for vegan and vegetarian customers. A few of the items are vegan except for the cheese so just ask for the cheese to be left off.
There aren't many places in Pontevedra for vegans and vegetarians but this is a good choice for good food
