Excellent meal - will be back - Edit
I had the tofu rice noodle bowl (bun). It was sweet but not overly so. I loved the vinegary dressing. The vegetables were super fresh. The portion was huge. I loved it and will be back to try more.

Delicious Vegan Options - Edit
We love this place! There are several vegan options. The staff is friendly and know what menu items are vegan. We love the Vegan Pho, Sweet and Sour Soup, Tofu Lettuce Wrap Tray, and Tofu Noodle Bowl. The warm and cool combinations are fresh, delicious and soul warming. This is a popular place so arrive early and be prepared to wait during peak times or order ahead for take out.

I got the pho and it came with a lot of veggies and a ton of noodles! Definitely a bowl I'd share with someone next time. It was great though and reasonably priced for the size! I'd 100% go back!

Best veggie pho in Boise - Edit
It's hard to find pho restaurants in town that have veggie broth. Pho Nouveau does. It's veggie pho has all the veggies you expect to find in pho. The broth tastes a little sweet to me, but a little Siracha helps. This is a cute date place and serves beer and wine.
