This place really delivers - Edit
In a town where breakfast items abound, and avocado toasts or chilaquiles often accommodate a veggie/vegan version, Pájaro Café hits the mark highly. The space, during one of the biggest downpours experienced whilst in the area, comforted us with the greeting of Cappuccino, the dog, two sweet and demure staff members and a cozy, albeit humid, environment. There is outdoor seating nesting under a canopy of lush greenery, and a thoughtful indoor booth and love seat. We ordered the chilaquiles and the vegan pesto toast, with the area's best golden milk and a delicious matcha lemonade. The richness of the pesto (vegan almond base pesto in a non-vegan restaurant! The joy!) augmented the pan de masa madre as well as the fresh vegetables adorning it, with such a delicious balsamic vinaigrette dressing. This is truly a standout! The chilaquiles were thick, and soupy and layered with delicious ingredients making it hearty and warming during the cold rain. We also had a vegan cookie that although not the most fun or desserty, it was jam-packed with nutrition and wholeness. Overall, we are impressed and hope for their success and continuation. We recommend it!
