Yummy burritos! - Edit
The burritos are huge for the price, and have a ton of flavor. They have a small menu for vegetarians/vegans. Check them out if you’re wanting authentic, veggie-friendly Mexican food.

wasn’t a huge fan of the cactus in the vegan burrito so i get it without. but its so good! my favorite mexican vegan food in the area for sure. their salsas are so good too. sometimes i’ll just get a bean and rice burrito and even that is honestly so yummy.

BEST VEGAN BURRITO! - Edit
Stopped at Pablito's on a whim and so glad I did. Their menu states that they have vegan and vegetarian options. Easy to communicate with the staff and the portions are huge! The "healthy choice burrito" is amazing. I asked for no potato/cactus mixture and they added a ton of fresh avocado without me even asking! Stop here next time you're in the area!!

I absolutely love this taco truck and eat here way more than I would like to admit. They are extremely accommodating to my dietary needs and so friendly. There's outdoor seating with a canopy but there is no restroom so plan accordingly (there is a grocery store nearby which is nice). I recommend the healthy burrito, it is vegan and is delicious. I can't eat a lot of nightshades so they substitute fresh avocado instead of potatoes for me. I also will order nachos with no cheese, add beans, rice, guacamole, lettuce, onion and lime and they have pickled carrots and salsa on the side. The prices are extremely reasonable for the amount of food they serve. My spouse and I can split a burrito and my family of 4 can split the nachos and still have left overs. They use vegetable oil (so not completely WFPB compliant) but NO lard so that's a win. They also have lots of vegetarian options.
