There are various veg options on campus, but One N Half is a decent choice. It’s designed predominantly as a takeout restaurant where you build your own bowl. There are various bases, toppings, and the vegan proteins are tofu and chickpea. My bowl was tasty and fresh. For the record, it is most accessible if you are already on campus. An employee told me a few months ago that they do not validate parking, so unless you’re on campus already, it’s in an odd place.
Note: be careful of the sauces, as most have bonito (fish) flakes. I’m pretty sure they told me only the Yuzu sauce is vegan but verify before ordering. I opt for the packets of soy sauce they have behind the counter to be safe.
