I went there yesterday (August 2020) and they had only 3 vegan options: pisto, ensalada de pimiento rojo and salmorejo. Actually all of them were really nice and tasty, but I wouldn't come back because of the lack of choices.

Ordered pisto and the vegane lasagne and it was amazing - even with vegan cheese. I can totally recommend this restaurant - the stuff is also very friendly.

I had dinner at Nueva Casa Postas yesterday and I found it OK. We ordered all the vegan dishes that they had (written on a blackboard outside): hortiguillas (they were ok, I guess, but too strong of a flavour for me), pisto (veggies and tomato, it was ok), and the vegan burger (made with beetrot) which was dry but tastes ok.

No great burgers - Edit
We tried the vegan burgers at Nueva Casa Postas. I had a quinoa beetroot burger patty which was no patty at all because it fell apart. Unfortunately, it neither had much taste. The staff was okey but there was no great atmosphere.

This restaurant clearly lists vegan options on the board outside. Great atmosphere and friendly staff. The location is ideal if you are coming from the ferry port.
