They have vegan ramen, or you can add the egg for vegetarian ramen. They also have tofu substitute for their (meat) buns. I had both the miso ramen and the spicy garlic ramen - both were good though the spicy garlic was a bit too salty for me toward the end. I would visit again, and recommend if your looking for some noodle soup!
I had to review this place. I cannot find a real noodle bar or ramen restraunt with vegan options in Maui. O'ahu has them, Hawai'i island has some, but it seems Maui is behind. This is a small food truck, and only a few options for vegans but my ramen was delicious. Miso broth with Udon noodles, Tofu, Mushrooms, ginger scallion with furikake (looks like he added some togarashi dried pepper seasoning as well?) topping. variety of vegetables. feels very authentic. Hopefully after a happycow review, more vegans will show up and he will expand his vegan options! would love to see soy curls or TVP as a protein option.
