Fresh herbs and veggies abound in their steamed buns, papaya salad, noodle salad, lettuce wraps, banh mi, and more they showcased at the VegFest. Healthy and satisfying.

Satisfactory food hall luncheon experience - Edit
I had the Pad Thai with Tofu and the egg removed. The portion was generous and packed with lots of large pieces of tofu. To go, the item was $16.50; I was told to expect a 10-minute wait for the food, which there was. The taste was good, slightly salty but overall okay.

The type of food Ninja City features is very flavorful when ordered at other restaurants, it's very bland at this location. I understand that this is an offshoot of their main restaurant, and a new offshoot at that, but it is disappointing to see that the flavors that make them popular haven't translated here.
Read moreI ordered the Ramen and the Vietnamese Noodle salad, each priced at $13. The ramen features a light miso broth, as broths go it is closer to a simple clear broth than the umami loaded base that usually makes ramen a delicious and filling experience. If going with Miso, it's generally a good idea to mix misos and use a flavorful vegan dashi as a base, here it tastes of water and a little white miso... that's all that comes through. The toppings are scantily placed atop the noodles, mostly raw veg that could use something seasoned of substance to make a meal out of the bowl. The noodles aren't bad, but they don't exactly match up to ramen noodles found elsewhere in town. I had to add a fair amount of seasoning to make this work.
The noodles salad is slightly better, as the flavor here is typically found in the dressing and as a dish, it's traditionally light and refreshing. That said, the toppings were scant, and it really needed spring rolls or something more filling to add a flavor and balance to the otherwise bland noodle salad. The most prominent element of this dish is the lettuce, and that's unfortunate.
Overall, I applaud Ninja City for having vegan options for each of their menu items but they do need to put more effort into flavoring the options they have. In a food hall packed with many vegan options, it's going to be hard for them to stand out.
