Read moreis a Boulder institution and is one restaurant that has been serving a vegetarian menu for a really long time (before it was popular to do so) -- and everything on it is great.
Mustard's serves a line of Tofurky and tempeh products on their vegetarian menu: vegetarian/vegan chili, tempeh burger, veggie dog (voted among the top vegan hotdogs in the country) Tofurky pepper slices/Reuben, and the soy Italian sausage. Their fries are fresh cut and crispy.
My favourite sandwich here is the tofu Reuben. (it's not really tofu, it's Tofurky pepper deli slices) with sauerkraut and pickles. (vegetarians can get it with thousand island and cheese of course) -- I add Dusseldorf mustard to this and Sweet Baby Ray's BBQ sauce and it makes a good substitute for Reuben dressing. The rest of the family loves their soy Italian sausage sandwich.
(Note: Some of the buns are vegan but one is not, so be sure to ask about this if you're vegan)
Sandwiches come with toppings of your choice like sauerkraut, hot peppers, grilled bell peppers, onions, tomato, etc. -- and the Italian soy sausage comes with grilled peppers, onions and marinara.
Speaking of toppings, they have lots of condiments available in the restaurant for your sammy: celery salt, Dusseldorf mustard, BBQ sauce, spicy giardiniera (hot spiced pickled veggies) mustards, ketchup, Chicago relish, pickles, malt-vinegar, ketchup...
One cool thing about Mustard's is if you ask, they'll give you a blanket so you can have a picnic on pretty/shady Boulder Creek that runs next to the restaurant. Indoor seating is limited and it can get crowded, but there is outdoor seating on the patio too.
One month a year they do "vegetarian" month where they have specials on the veggie items (usually June, I think)

I hadn't been to Mustards in years ,but recently went in with my family in tow on two occassions. It's a small place, gets kind of warm in the summer. You may want to take your order to go and sit in the grass by the creek or walk over two more blocks to some outdoor tables. Mustards proudly displays that they server Tofurky products. The Reuben is the Tofurky Peppered slices with sauerkraut. Order it with spicy mustard. The Kids Veggie dog is pretty large and comes plain. They have serve yourself mustard, ketchup, and spicy gardiena mix. If you order the regular/adult Veggie Dog, it's the same dog but it's offered up with toppings. yellow mustard, relish, onions, tomato, pickle, sport peppers, celery salt & sauerkraut.
