Michelin Ramen at Reasonable Prices

Michelin-approved Japanese ramen eatery from Tokyo, with the Singapore outlet recently opened in July 2024! Impressively, they have a number of vegan options (containing alliums) in their menu. For the ramen, the vegan options are Shoyu with Truffle Pepper, Spicy Yuzu, and Yuzu Shio. Flavourful broth base made using mushrooms, kelp, and vegetables. Personally would have liked some tofu for protein; nonetheless I enjoyed the juicy, smoky, and tangy tomato chashu (whole-food plant-based with natural ingredients, no mock meat)! Also loved the supple springy housemade whole wheat noodles. There’s even a glass window through which you can view the noodle making process. As for the sides, the vegan options are Enoki Chips, Fried Kinoko, and Garlic Edamame. Hope the vegan options in the menu for the sides and drinks can be labelled, and also hope the vegan options can be further expanded (I’m particularly curious to try a vegan version of the matcha broth hehe). Of note, there may also be cross-contamination in terms of the cooking oil and utensils, which is understandable. Regardless, I’m grateful for the tasty and quality vegan options at reasonable prices (under $20) , especially since good vegan ramen is so hard to come by in SG. Would also like to give a special shout-out to John, who was extremely nice, patient, and thorough in explaining the dishes and accommodating our dietary preferences!
