Could they have more vegan options? YES. But the ones they do have are intentional (not afterthoughts), clearly labeled, and tasty. The drinks are also good. So while it might not be a place you go out of your way to try, you won’t be disappointed if you find yourself here during meal time!

Amazing Interior but Bad food - Edit
I've been here a handful of times and never been impressed. I've gotten the Mystic 18 Vegan Burger which was wayyyy overpriced for its quality. It was flavorless and had a soggy bun. My omni friends also have seen that their quality is lacking. Would not recommend. update as of 10/2023: I got the jamaican rice bowl with added tofu it just tasted disgusting and was $4 for tofu which was shriveled and nasty. I will not be returning to this McMenamins.

I went there for breakfast, and the only options were the breakfast sausage (two patties for $6!) and the cottage potatoes. I got both, and they were both really good! It would just be nice if they had more options! My mom (not vegan) loved what she had, though. And the environment was super unique and fun!
