Good old Mamoun’s - Edit
Good old Mamoun’s from NYC made it to Princeton, yay. Always solid falafel dishes, always pretty much dirt cheap no matter the location. Vegan items are clearly marked on the menu.

easy to eat vegan - Edit
Love this place! It's easy to order a vegan meal, they have a clearly labeled vegetarian section. You can order different combinations as a salad or sandwich. They also have side orders of falafel, etc.
Read moreMy go to is a sandwich with falafel and hummus, so good! The falafel comes with a super delicious tahini sauce. Pro tip: if you order just a side of falafel, get it to-go and you'll get more sauce to dip. :)
I don't think any of the desserts are vegan. But they do have good sweet drinks like mango juice.
Pros: vegetarian options clearly labeled

Tried and true - Edit
This chain has locations in many college towns on the East Coast. Solid food all around, no frills, just tasty falafel/hummus, etc. I usually get the sample platter, always a decent bet. Watch out for the hot sauce on the table...it's REALLY spicy.
