Accommodating. - Edit
The atmostphere is upscale and oldschool, which is fun. The waitstaff is very nice and helpful, and the chef was able to offer me a couple of options that could be made vegan. The waitress said to call ahead next time just to be sure they could accommodate, so I recommend doing that!

Off Menu Vegan Options! - Edit
I was in Springfield for a conference and was worried about where I would eat dinner. When we asked the bartender if there were any vegan options, he said only on the lunch menu but he would check with the owner to see if they could do anything for dinner for us. The owner was so accommodating and made us a vegan version of the risotto with mushrooms and sweet corn. It was delicious- highly recommend asking for it. They also said the bread was vegan so we were able to enjoy that with some olive oil!

Needs even one vegan option on menu - Edit
The reviews were out of date. I did call ahead to see if they had vegan options because I was visiting with others who are meat eaters. The small menu is solid standard American diet. They said they could offer pasta or risotto veganized and minestrone soup without cheese or croutons. Skip the soup. It was weird and tasted like thick spinach and bean soup, very chunky not minestrone specifically.
Read moreThe dining room is lovely old building and I like the location. Staff were friendly and attentive. The only real issue is that they are poorly prepared for vegans. They do have vegetarian options on the menu, but not vegan.
We asked for vegan pasta. The waitress initially told us the penne was made with egg and milk but then went to see what other options they could offer. I think the chef was nice enough to create something on the fly; Penne (definitely dried and not made with egg) with tomato marinara, eggplant and spinach. I think it was ok but not outstanding in taste and I would urge the restaurant to consider offering something standard as an option for vegans. Any pasta with oil and steamed veg would be good and not only for vegans.
I do appreciate the fact that they attempted to offer something to us but honestly the menu should just have even one thing. If they had one option it probably would have had better flavor.

Vegan Options - Edit
We were very thankful to have a place close by with vegan options. The hostess was very knowledgeable about what foods they could serve our family of five. We had the vegan sausage with penne, tomatoes and spinach and the mushroom ragu. Next time I would choose the pasta over the mushroom ragu.

They offer the Beyond Burger for lunch only, so I did not get to try it. But, they did make me their beyond sausage pasta dish. It is not on their menu, so you have to ask for it and I would recommend calling ahead. But the pasta was delicious and very filling! It was $18 so it is on the more expensive side but well worth it. Also, they offer a minestrone soup that can be made vegan by omitting the croutons and cheese which was also delicious but needed to be warmer as I like my soup to be hot. Overall, it was a really great experience and our waitress, Danielle, was very good and knowledgeable about vegan options. I would recommend!

Vegan and vegetarian options to die for - Edit
I come to maldaners restaurant at least once a week for their vegan beyond meat burger. They nail the cook on this every time. The staff is more than knowledgeable about all the options and very helpful when giving recommendations. It's nice to see a upscale restaurant in town that offers several different options for vegans and vegetarians alike. For dinner they offer a delicious beyond meat Italian sausage pasta that will knock your socks off. They also have wild mushroom options that can be made into a pasta or even risotto.
