I live here in GP and this is my go to restaurant. They are happy to accommodate any and all dietary restrictions. And the food is bomb! Enjoy!

Their menu does not look promising, but they are willing to veganize essentially anything on the menu. We both got their hash, and I got it creamed (with coconut milk), tofu, soy sausage, and vegan sourdough. This restaurant also decreases the price of their menu items if you don't get eggs or meat, or substitute for them otherwise. The food was substantially better than expected, and the mimosas were great too. Luckily they didn't seat us next to the annoying guy in the "Not vegan" t-shirt.

The beetstrami - Edit
If you like beets, the beetstrami is a must try! It’s vegetarian but they will make it vegan for you and I think the vegan version is even better. They use a roasted garlic sauce instead of aioli. They have a rice & bean bowl (the “staple”) that can be veganized as well. I believe they have soy sausage as an option.

My husband and I are vegan and we have eaten at mimosas for a long time. They have incredible vegan options that have tons of flavor. You do have to ask your server about the vegan options. As many things on the menu can be made vegan. They also have amazing service!!

Awesome food, helpful staff. It's really hard to find restaurants in this town that offer vegan options and actually care about making them taste good.
There are vegan items on the menu, but these guys have some really good ideas when it comes to creating a tasty vegan dish that's not on the menu as well.
For breakfast they made me a dish of creamy potatoes (made with coconut milk instead of dairy), veggies (instead of eggs), and soy sausage (instead of beef). It was phenominal.
They did a customized breakfast dish for me another time I had breakfast here too and it was great. Have been impressed with lunches I've had here as well.
They tend to get really crowded so I don't come all that often, but apparently Thursday morning right when they open (8am) is a great time :)
