My favourite gluten-free bakery in Madrid

I am not gluten intolerant BUT I have noticed that many gluten-free breads are made with eggs in them. Well, in this bakery there are no animal products in their breads at all, and they have expanded their offer to also have vegan food options (focaccia and cookie)!! And it's all organic!!!
