I've eaten at Silvergreens many times, and they are always very friendly and open to substitutions. Not all of their menu items are vegetarian, but they are willing to sub avocado for meat on anything. My favorites are the Hummus Delight (no mozz, add red onions and marinated peppers), Mandarin Salad (with extra almonds/ no chicken), and the Thai Pasta (no chicken). They also have yummy organic iced tea and a vegan smoothie I could drink every day. PLUS they show you the exact nutrition on the receipt - pretty cool!
