Non-veg
Serves meat, vegan options available. Nagano station houses many soba noodle eateries. This one is a spacious restaurant on the 3rd floor of Midori store. Through a big window you can see the kitchen where soba noodles are being made. Menu is available in English, and staff can point out which dishes would be okay for vegans. Large portions.

my experience here - Edit
Alrighty so my experience here is that I showed them my card of im vegan I cant eat meat, fish, egg, fish sauce/broth etc... and they worked with me to find something I could eat. To save you some time there, your options are limited to the cold soba with soy sauce instead of the regular soba sauce. This is still very tasty however its not the same as it is traditionally. It was a good portion size and they have a varied sake menu. Would rate higher if there were more options. This place however for any other nonvegan person would be rated higher in my opinion.

NOT VEGAN OR VEGETARIAN - Edit
I don't know why this restaurant is featured in Happy Cow. The vegan/vegetarian options are non-existent. All soups/sauces/marinades contain fish. Pretty much the only thing you ca order is cold soba noodles and eat it dry without the sauce, which is as yummy as it sounds. This is as vegan as any other soba noodle restaurant in Japan ie not at all.

Great find right at the station - Edit
Nagano, Wednesday 5/7/2017
Read moreA restaurant (called kusafue or soufue – see photo for kanji) in the Oraho food court area of the Midori store at Nagano Station. This one is at one end of the 3rd floor, right at the landing of a flight of stairs that leads up from the food court on the 2nd floor. Has a big window on the left side through which one can watch soba noodles being skilfully made by up to two very practised men (see photo). The menu is available in English and the reception staff understood our needs and pointed out which dishes (there are several) would be okay. Spacious restaurant with many seats, some of which overlook the main area outside the western (Zenkoji) side of the station, with its taxi and bus waiting areas, pedestrian overbridge etc.
The menu warns that the portion size at this restaurants are large and that was correct. You can ask for small portions. We had a delicious dish of a selection of mushrooms, a bowl of cold soba with soya sauce and soba-yu (the cooking liquid from the soba) to dip them into, and a bowl of hot soba (with soya sauce flavoured soup for the hot one). Both came with some vegetables, and the hot one with fried tofu skin. Both were great and we wish we had found this earlier. Not the same intimacy as in a small family-run restaurant but good value at about 2500 yen for the two of us. Seems to be open every day.
Pros: good food in sizeable quantity at good price, conveniently located at station, staff helpful
