While I appreciate Kinboshi Ramen offering vegan-friendly options on their menu, their portions, lack of creativity with the ingredients, & the blandness of the ramen I've tried keep me from considering returning any time soon.

Vegan Tonyu Red had a lot more broth or not as creamy as the miso. It was very spicy and a bit spicer than the miso. It was a good ramen alone but in comparison to the red miso.. the red miso takes my heart and will definitely have me back!

I am obsessed with the Vegan Tonyu Red ramen. It has a delicious, spicy soy based broth with lots of veggies & tofu. I hope to try other vegan menu items in the future.

Go for the Miso - Edit
I ordered Vegan Gyoza (pan-fried dumplings with spinach shell, stuffed with onions, seven grains, chives, and shitake) and Miso ramen. The Gyoza were kind of bland. However, the ramen was very flavorful and included more vegetables than I expected.

This place is not called Marukin Ramen anymore it is called Kinboshi Ramen. Even though there is a few vegan options, they are the only ones you really need to go there for. Compared to other local ramen places that have vegan options, this place keeps me coming back for more every time I want Ramen. The Noodles have the best texture and flavor than most places around, the broth makes me cry because its so good. The simple add ons are just right and somehow the chef keeps it consistent every single time. The local beer offerings and the sake just make it so much more special. Yes dont forget the appetizers, one last thing to add is the curry…. I would give it 5 stars but happy cow told me since it is not fully Vegan it cant get a full star set. I recommend it to anyone who is seeking a nice simple delicious bowl of Vegan Ramen, they also sell regular Ramen with meat but I don’t eat that stuff. Enjoy😉

Miso over Shio - Edit
There are seemingly few places in Portland to get vegan ramen. We tried the vegan Miso and Shio (non-spicy), and we both liked the Miso better. There Miso had better flavor, but fewer “toppings”, whereas the Shio was pretty light but came with veggies and tofu. The vegan gyozas were alright. Service was friendly and fast. Portions were decent.
