Good vegan ramen - Edit
Kato Ramen has one vegan option on the menu, which is the vegan ramen. I thought it tasted good, but I had higher expectations. I should also say I usually eat my ramen with veggie broth and not cashew broth, so that may be why opinion is what it is. While I was expecting more, it was still a decent meal.
Read moreI think they can improve their menu by offering a traditional vegan ramen option with veggie broth in addition to the cashew broth. This would also be helpful for those who want the vegan option but have nut allergies. Overall, they can also add other vegan options to have a few to choose from!

Fantastic vegan ramen - Edit
I now understand the hype! I tried to get a seat at this restaurant on multiple occasions but due to long waits, had to leave. Well third times a charm! I was finally able to get a spot at the bar. Very small inside. But the staff is fast and efficient. And don’t get me started on the food. There is one vegan dish on the menu. That is their vegan ramen. It is fantastic! Probably the most flavorful vegan ramen I’ve ever had. The cashew broth is beyond words. Well worth the wait.

OH.MY.GOODNESS!!!! I finally made it out to Kato Ramen!!!! This place was a complete experience!!!!!! Absolutely everything here was incredible! The fun and vibrant atmosphere, the friendly and incredible service, and of course the food!!!!! Today I had the vegan ramen with a spice bomb, and a seaweed salad. Get here early!!!! There was a line out front waiting for them to open, and it was full within minutes of opening. There was even a group standing outside waiting to get in when I left! #supportlocal #buylocal #slurploudeatfast — eating lunch at Kato Ramen Toledo.

Vegan Ramen! - Edit
The restaurant offers four ramens. One of the options is completely vegan. This option is called the “Vegan” ramen. Big portion size. The cashew broth was delicious. You can also customize the ramen with different “add-ins.” The restaurant has a really cool and fun vibe. The staff were all very friendly.
