Vegan Esfahani specialties - Edit
if you are going anywhere in Iran, you need to contact Sina for his network of vegan chefs around the country. I will only speak of my experience in Esfahan, where he is himself based. He was able to accommodate my perhaps overly demanding requests not only for vegan Iranian food, but for vegan Esfahani dishes one would be highly unlikely to find elsewhere. Through Iran Vegan Travel, I was able to have gheymehreezeh nokhodchee (a meatball and potato dish), yakhni loubia (a mashed meat, bean, and vegetable dish), taaskabab (a meat, potato, and vegetable dish), beryan (a meat and bread dish which may be Esfahan's most iconic dish), vegan dough (a Persian yogurt drink), side dishes, and desserts. All of the above dishes were vegan and delicious. Cannot recommend highly enough.

Iran vegan travel helped me with advice about travelling as a vegan in Iran and I also got to eat some delicious veganised iranians dishes cooked by their staff. Highly recommended for all vegans in Iran.
