Happy surprise in Dwingeloo

Had to spend the night in this charming little town driving through the Netherlands. The hotel restaurant had three vegetarian dishes on offer and could easily make any changes necessary to make it vegan. We were served an appetizer of fermented cauliflower and I had a lovely roasted eggplant with mint and pomegranate served with fries. My husband ate a vegetarian rizoni and a starter of marinated tomatoes that tastes excellent on its own without the mozzarella that was suggested in the menu. For dessert we got some homemade sorbet with forrest fruits.
