The best thing about this Hotel is to not have to worry about food at all, since everything is vegan. This especially makes breakfast a very carefree affair, though the buffet is a 4/5 at max.
For dinner, we had the three course menu, which was better than expected on two out of three evenings, with the third one being a bit bland and boring.
Also, the service varied extremely - the waiter of two evenings was incredibly nice and good at their job, whereas the third evening's intercations with wait staff were outright unpleasant.
As for the rooms, others have already pointed out how outdated they feel. However, our room was clean and definitely good enough. Just the bed was very uncomfortable, unfortunately, and we did not sleep well. Plus, the walls can be rather thin - we heard our neighbors from time to time.
Still, we enjoyed our stay, mostly also because of the sauna / pool area, which we used every day. It is definitely the highlight of the hotel.

Good beds, clean bathroom.
Breakfast with a lot of choice: several types of vegan cheese and mock meat, plant drinks and yoghurts, muesli and corn flakes, nuts and seeds, bread spreads, jams, a lot of prepared food for breakfast, among which spring rolls, tomato-tofu, and so on (see pictures).
The owner knows how to cook vegan, and as a classic trained chef, he is very good in making traditional dishes vegan.
The hotel is from 1881, and a bit old inside, what some people may not like, but we found it charming. The rooms were clean.
Our room was at the front with balcony or loggia and had view on the Mosel river. Very nice.
What we like less is that checkout is only possible from 9am onwards. You cannot pay f.ex. the night before either, because they want the jeys together with the payment. This is different from most hotels. So here, especially when you leave on Friday when many guests leave, you need to stand in the cue on the morning of your departure and loose a lot of time, this is not customer friendly.
Fully vegan hotel/restaurant + wellness area - Edit
The hotel is located in the “nicer” area of the Mosel region. Went there three times: once to the main restaurant and twice as a hotel guest (3 course dinner breakfast buffet). Both dinner places are good but I prefer the a la carte menu. Definitely worth a visit!
Really lovely friendly hotel, fantastic breakfast, great sauna and swimming pool, choice of great restaurants, beautiful situation, amazing views from windows and balconies, lovely proprietor and staff, we definitely want to come back!
Easy to reach by public transport - bus or boat! :)
We stayed here for two days and tried out the different restaurants, had breakfast here and enjoyed the atmosphere of the hotel. The staff is incredibly friendly and the owner is just a really amazing human being.

Das Essen im Hotel war unser absolutes Highlight - Edit
Wir haben fünf Nächte im Hotel Nicolay verbracht und hatten Halbpension gebucht.
Das größte Highlight für uns war das Essen in dem Hotel: Absolut köstlich und super kreativ. Das Essen beim Frühstück hat sich leicht abgewechselt: Unterschiedliche Aufstriche, Brotbelage und Brötchen. Worüber wir uns noch gefreut hätten, wären warme Speisen wie vegane Würstchen mit veganem Rührei. Aber auch ohne das war es super lecker und sättigend.
Das 3 Gänge Menü abends war super lecker: das Essen hat sich nicht wiederholt und die Speisen wurden sehr schön angerichtet und ausnahmslos alles sehr lecker gewesen.
Im Hotel gab es noch weitere vegane Restaurants. Hier war es für uns etwas unübersichtlich wann was offen hat und da es (als wir da waren) sehr leer war, war es unregelmäßig mit der Bedienung. Aber auch dort sehr lecker.
Die Lage des Hotels ist super: in erster Reihe an der Mosel und in der Nähe von Traben-Trarbach und Bernkastel-Kues. Es gab Parkplätze und eine Bushaltestelle direkt vor dem Hotel.
Spa Bereich hat uns auch sehr gut gefallen: Saunabereich war vor allem super. Pool auch gut.
Zimmer war für uns ausreichend: es war etwas alt aber hatte alles was man braucht. Ein zweiter Stuhl wäre noch besser aber sonst alles gut. Zimmer war sauber.
Uns hat es gut gefallen, dass das Hotel familiengeführt ist - Familie Nicolay ist sehr sympathisch und hat sich super um die Gäste gekümmert. Wir haben uns wohl gefühlt und kommen gerne wieder.

We came to eat in the evening, the restaurant was very quiet, the staff very friendly! They even answered our questions about the village.
The food was excellent! (We had a "fishburger" with some fries and dips) Everything is 100% vegan so it was a real pleasure to choose from the menu without having to ask what I could eat or not!

Breakfast buffet was lovely. Lots of things to choose from, cereals, fruits, jam, slices, pate, spread, ...
No tofu scramble or other hot dishes, or Danish pastry, which would make it complete!
Breakfast is in 2 shifts, and you have to notify the day before if you want the early shift or the later one. A bit of a pity, one of the pleasant things of being on holiday is just waking up when you want to, no alarm clock.
Apparently some rooms in the hotel have been recently renovated, but our room clearly wasn't. Judging by the bathroom and furniture, I think it stems from the 1970's? Which also means poor insulation, and you can hear traffic from the road as if the window is open.
The room was very basic, with some furniture wore down. Fridge dirty and not working (was mentioned and apologised for by the owner, but then still ...), cabinets not closing properly, hairdryer not working...
Toilet of our room was dirty upon arrival, wasnt cleaned the day after, saw housekeeping in hallway and asked to clean, which she did. Rooms aren't serviced (no fresh towels, cleaning bathroom, ...) unless one explicitly asks.
The owner is very charming and is happy to show you around and talk about the history of the hotel. Communication with staff (reception, restaurant) not always as smooth, (our German is unfortunately not very good), and that visibly seemed to lead to some frustration ...
The wellness and pool (inside) area is very nice and newer.
So all in all: breakfast ok, wellness area Ok, but very poor accomodation/room. We don't mind some lesser comfort, but then that should also be reflected in a lower price, which isn't the case at 200€ (room incl breakfast /night).

We also wanted to try dinner at Die Weinstube on another night (just the room next to this one, but more restaurant feel with table cloths etc), but that was fully booked every night with hotel guests who have half board. You can also have the 3course menu of the Weinstube in the Sonnenuhr room, but we declined.

Das Nicolay Hotel inkl Restaurant sucht man wegen dem Mindset und dem tollen veganen Essen auf. Es liegt (wirklich) direkt an der Mosel.
Lisa und Johannes sind sehr nett und duzen gleich alle, um eine lockere Stimmung entstehen zu lassen.
Zum Wellnessangebot kann ich nichts sagen, da ich diese Möglichkeit nicht in Anspruch genommen habe. War zum 1. Mal in einem veganen Hotel. Fand es super auswärts so eine große Auswahl beim Frühstück zu haben, bei der ich zu absolut allem greifen konnte. Auch das a la carte Essen am Abend ist sehr lecker. Beim Geschmack hatte ich bisher die Erfahrung gemacht, dass man auch -zu meiner Freude- nicht krampfhaft versucht, dem Geschmack von Fleisch nachzueifern.
Zudem gibt es grundsätzlich die Möglichkeit, Überraschungs 2/3-5-Gang-Menüs am Abend zu bekommen. Da das Restaurant für alle offen ist, würde ich für abends lieber immer vorher telefonisch/persönlich (kurz vorher) reservieren/anfragen.
Bei der Zimmerwahl scheint mir ein Doppelzimmer die bessere Wahl. Beim Einzelzimmer war das Bad beengt. Beim Einzelzimmer Klassik und Doppelzimmer Klassik ist ein Badbesuch wie eine Zeitreise.😄Aber so lange alles da ist und funktioniert, trägt es den Nachhaltigkeitsstempel und frühere Materialien waren eh oftmals viel robuster. Zeltlingen scheint ein sonst sehr touristischer Ort an der Mosel zu sein.
Something that had been planned for years was a visit to Vegan Hotel Nicolay 1881 in Zeltingen, Germany. Last june it finally happened, we spent the night, ate and drank in this 100% vegan hotel on the Moselle.
How nice is it to be able to order everything on the menu because it is all guaranteed without animals. That you can eat amazingly good plant-based food was once again confirmed during this visit. You can see what we ate in the evening in the image below.
A delicious, full-fledged dinner, delicious ice cream, cappuccino with a hump of foam and of course vegan beer and wine.
In the morning a very extensive breakfast buffet (see photos below) with all kinds of tasty snacks, savory and sweet spreads, sauces, vegetable dairy, fruit, vegetables, salads, sandwiches, coffee, tea, juices, etc. etc.
Again we've been visiting Nicolay and again we've been eaten the Nicolay posttopf and the schitzel beacause they were so delicious. And again we enjoyed the food.
Becauce of the lack of capacity and some personal problems they actualy only cook en serve for the hotelguests at the moment, but for us, they made an exception. We appricieded this very much.
It's a nice vegan hotel in a good location in an area where there's not that much vegan to be found.
The food is all vegan, so it's nice you do not have to worry about that, since they are pretty specialized in making things getting pretty close to what people are used to eat as non-vegan like burgers, schnitzels...
It is an amazing experience to taste what they are capable of making being all vegan, I have to admit that I wanted to ask a few times, sure this is vegan.
Now the alternatives planned based foods of something that people used to know differently, are not really my kind of thing, now I really enjoyed the experience and tasting it.
We took the vegan weekend experience, and it was a good experience, really excellent not having to see or find out if something was vegan or not.
The half-pension vegan food was good, now simple, nothing special.
The only downside is the service, only a couple of people (the owner and another girl) speak English.
It took a translation app on my phone, now the waitress was so bored with that, it really felt like she was avoiding us (bored because of us, or bored because she didn't speak English was hard to tell).
Un hôtel restaurant végane au bord de la Moselle - Edit
C'est en tant que cyclistes que nous avons connu cet hôtel, car la piste cyclable de la Moselle, qui relie Metz à Coblence passe juste devant.
L'hôtel est rénové petit à petit, et, pour des raisons économiques et écologiques, tout ce qui est en bon état est conservé, ce qui donne aux grandes chambres avec vue sur la Moselle, un air vintage. Petite piscine et 3 saunas ( un sauna finlandais à 90 degrés, un sauna humide à 65°, un sauna avec infrarouges).
Le buffet du petit déjeuner est impressionnant et très bon.
Plusieurs restaurants véganes. La nourriture est bonne, nous venons depuis des années, et les repas varient de très correct à délicieux.
Les patrons sont engagés et sympas. Enfants et animaux très bienvenus.
Everything in the hotel is vegan, including the spa products. It's obvious that the hotel is a labor of love by the couple running it. The old building is slowly getting renovated bit done areas of the house haven't been brought up to the current standard. Still, the creativity and care that is clearly visible in food and interior decoration of picnic areas such as the spa (with fitness room, three saunas, and a pool) makes up for it
Recommendation: Chat with the owners to get the inside story of how the hotel was turned vegan and many other stories!
Wir hatten ein leckeres drei Gänge Menü, die Auswahl beim Frühstück war auch super. Das Zimmer war leider nicht auf dem neuesten Stand, aber die Saunen sind recht neu.
Das essen ist Super lecker. Das Frühstück ist bombe.
Die Zimmer sind im gutem Zustand, zwar nicht auf dem neusten Stand aber das ist ja auch absolut nachhaltig. Die Leute sind sehr freundlich und hilfsbereit.

Bei der Zimmerwahl scheint mir ein Doppelzimmer die bessere Wahl. Beim Einzelzimmer war das Bad beengt. Beim Einzelzimmer Klassik und Doppelzimmer Klassik ist ein Badbesuch wie eine Zeitreise.😄Aber so lange alles da ist und funktioniert, trägt es den Nachhaltigkeitsstempel und frühere Materialien waren eh oftmals viel robuster. Zeltlingen scheint ein sonst sehr touristischer Ort an der Mosel zu sein.

Very good vegan hotel - Edit
Something that had been planned for years was a visit to Vegan Hotel Nicolay 1881 in Zeltingen, Germany. Last june it finally happened, we spent the night, ate and drank in this 100% vegan hotel on the Moselle.
Read moreHow nice is it to be able to order everything on the menu because it is all guaranteed without animals. That you can eat amazingly good plant-based food was once again confirmed during this visit. You can see what we ate in the evening in the image below.
A delicious, full-fledged dinner, delicious ice cream, cappuccino with a hump of foam and of course vegan beer and wine.
In the morning a very extensive breakfast buffet (see photos below) with all kinds of tasty snacks, savory and sweet spreads, sauces, vegetable dairy, fruit, vegetables, salads, sandwiches, coffee, tea, juices, etc. etc.

Again we've been visiting Nicolay and again we've been eaten the Nicolay posttopf and the schitzel beacause they were so delicious. And again we enjoyed the food.

It's a nice vegan hotel in a good location in an area where there's not that much vegan to be found.

It is an amazing experience to taste what they are capable of making being all vegan, I have to admit that I wanted to ask a few times, sure this is vegan.
Now the alternatives planned based foods of something that people used to know differently, are not really my kind of thing, now I really enjoyed the experience and tasting it.
We took the vegan weekend experience, and it was a good experience, really excellent not having to see or find out if something was vegan or not.
The half-pension vegan food was good, now simple, nothing special.
The only downside is the service, only a couple of people (the owner and another girl) speak English.
It took a translation app on my phone, now the waitress was so bored with that, it really felt like she was avoiding us (bored because of us, or bored because she didn't speak English was hard to tell).
Pros: Excellent vegan hotel, Excellent vegan proposal, Great experience

C'est en tant que cyclistes que nous avons connu cet hôtel, car la piste cyclable de la Moselle, qui relie Metz à Coblence passe juste devant.
Read moreL'hôtel est rénové petit à petit, et, pour des raisons économiques et écologiques, tout ce qui est en bon état est conservé, ce qui donne aux grandes chambres avec vue sur la Moselle, un air vintage. Petite piscine et 3 saunas ( un sauna finlandais à 90 degrés, un sauna humide à 65°, un sauna avec infrarouges).
Le buffet du petit déjeuner est impressionnant et très bon.
Plusieurs restaurants véganes. La nourriture est bonne, nous venons depuis des années, et les repas varient de très correct à délicieux.
Les patrons sont engagés et sympas. Enfants et animaux très bienvenus.

Fully vegan hotel with spa - Edit
Everything in the hotel is vegan, including the spa products. It's obvious that the hotel is a labor of love by the couple running it. The old building is slowly getting renovated bit done areas of the house haven't been brought up to the current standard. Still, the creativity and care that is clearly visible in food and interior decoration of picnic areas such as the spa (with fitness room, three saunas, and a pool) makes up for it
