Brand-new Vietnamese restaurant right by the castle

We learned from the woman working there, who I think is the owner, that this was their first week in operation (August 2024)! The menu includes indications of vegetarian and vegan options, but is not entirely accurate - for example the fresh and fried spring rolls are both marked vegetarian, but are vegan. I believe the bun chay may be vegan or may need the tempura mushrooms left off to be vegan, and the banh mi probably would be vegan without the mayo. The owner is very nice and seemed eager for feedback as the restaurant is so new, so she would probably welcome help labeling her menu more clearly. We were happy to have vegan/vegetarian options so close to Frederiksborg Castle.
