Separate Vegetarian Menu - Edit
You need to ask for the Vegetarian menu, and most of the items can be made vegan by omitting cheese and/or sour cream. I had the veggie burrito (without the dairy) and it was very flavorful and filling.

Veggie menu - Edit
This is the only restaurant around with a vegetarian menu. On there is vegetarian fajitas. Absolutely delicious. I highly recommend.
