Unique Yumminess - Edit
My favorite breakfast spot! Great for mixed company, lots of vegan options and plenty for other diets. They have vegan eggs & cheese, non-dairy milks, tofu, etc. and portions won’t disappoint! There’s a New Mexican flair to the cuisine, but also a few other styles.

Vegan options listed with "VEGAN!" emoji on menu. - Edit
They have the vegan options clearly labelled on their menu with a little emoji that says "VEGAN!" which is nice because sometimes the "V"'s are confusing (is it vegetarian or vegan) I thought it was cool to see, especially since nothing is mentioned about if it's vegetarian or not. Usually it's the opposite. There are about 7 or 8 vegan options listed with others that could probably be modified to be vegan. Says on the menu you can substitute vegan cheese on any menu item for $1.00 or add tofu.

There were a few vegan options available on the menu and I went with the vegan breakfast burrito. It was okay and the portion size was huge. Basically, the tortilla was filled with a lot of veggies, mushrooms and tofu. I think this could have been amazing if a little effort were to be given to the tofu by marinating it for flavor and baking/frying it for texture. Instead it seemed to be cut directly from the package and tossed into the burrito making it very bland. Overall it wasn't a bad experience though and I was glad to have options.

Limited for vegans - Edit
They have one vegan tofu scramble on the menu. You’d think it would be easy to sub tofu in some of their other scrambles, but when I asked to sub tofu in their more Tex-Mex style scramble, it came out with tofu and bacon. They remade it but flavor was meh. Wouldn’t take much for this place to be more vegan-friendly but as it is I probably won’t be back.

One of our favorite places for breakfast in downtown Lawrence. I usually get Mark's scramble - locally made tofu with veggies, yummy. Sidewalk seating available.
