One choice, but it's great! - Edit
The crunchy burrito is the only vegan breakfast option on the menu and it's a fantastic breakfast. Really delicious! Other menu items could be made vegan with modifications. Would love to see a vegan B&G added to the menu.

Good MARKED ON MENU breakfast options for vegans - Edit
I’ve enjoyed Gailey’s since I was a nonvegan child and it was delightful as a vegan to stumble across them offering vegan options. I hope they’ll add more over time; our little vegan community in Springfield would love it.

It's got a good ambiance. Plenty of drinks (coffee, juices, loose leaf teas, alcoholic drinks). Unfortunately only 4 items labeled vegan here. Two of which are essentially the same thing: the Heady Skillet and the Crunchy Burrito. Both dishes come with a fruit cup. If you want more potatoes, go for the Heady Skillet. I opted for the Crunchy Burrito. I enjoyed having the variety of the burrito, the granola, and the fruit cup. The vegan sausage used here is more of a chorizo/ground meat texture rather than sausage links. It's a filling meal. The two dishes are labeled under healthy options but they were quite greasy. Also, the avocado toast is labeled vegan and ovo-vegetarian. It'd be vegan if you took off the feta and the eggs.
Read moreThe restaurant doesn't allow reservations ahead of time. You go there and make the reservation. Once they add you to the list, you can see how long you've waited and how many parties were ahead of you. That was a nice feature since we were able to walk around on Walnut St before our table was ready.

I was prepared to negotiate with the waitress for a vegan dish after reading the previous reviews, but I was happy to discover a couple of vegan dishes on the menu. I had the vegan breakfast skillet with vegan sausage and potatoes. There was also a vegan burrito on the menu. I also had almond milk as creamer for my coffee. My non-vegan companions also decided to order vegan sausages 🙂. It was incredibly delicious. There was a wait, but I loved their online system. You could see how far down you were on the list at all times, and they texted you when your table was available. The staff were incredibly friendly. A great experience all around.

So, there isn’t much on the menu but my server (Harrison?) Double checked on some ingredients for me. FYI: pancake mix has powdered egg in it. And offered to make me a veggie/ potato scramble... It was simple and good... so were the bloody Marys. :D

Unlike the previous review, there are no vegan options available at this location. They will accommodate you with their only option available, hummus and some veggies. All their bread items have egg or milk in them. Major bummer. I was looking forward to some donuts.
