This is a nice little shop with plenty of selection of vegan items that might be hard to get in supermarkets. I visited on a hot day and I would have loved it if some of their nice drinks (Kombucha, Kefir, ...) were available also in a fridge, but that's really the only thing I could complain about.
Gaia is Bulle's only locally-owned organic shop, and its cheerful and conscientious proprietors do a good job stocking a diverse selection of well-chosen items, including fresh local produce and a great many vegan products including a nice selection of sweet stuff and faux "meats" (though unfortunately they also sell some "real" meat as well, so examine the labels closely).
A tip to shopping at Gaia on a budget: everything that has a price on the packaging is sold here for the same price it is everywhere else, but in the case of items that do not include a price on the packaging, the markup at Gaia is sometimes quite a bit more than at other Swiss bio shops (and a few of their prices are frankly unreasonably high), so if you're also planning to pass through nearby towns such as Lausanne, Fribourg, or Bern, then you might do well to do some comparison shopping.
That said, there's plenty of affordable items at Gaia too (and there's also a fair selection of less expensive organic products at the Coop, Migros, and the Sun Store, all in Bulle, so you might check there too).

Nice place to stock up in Bulle - Edit

Great selection for a small shop - Edit
