ETH canteen - Edit
It‘s a normal canteen for students. I think they offer a vegan menu every day and you can look it up online. It was always nice but I don‘t like that the vegan menu costs more than the meat one (even though the vegetarian one is cheaper than the meat one).

Good selection, good variety, great labeling, cheap - Edit
If you're not a student at the ETH Zurich, this might be a little remote. However if you are, you can get a good number of changing daily menus and you can always fall back to the mezze buffet, which is mostly (entirely?) vegan as well. Attention: The dining area is upstairs, on the ground level is just the cafe.
