Easy to find if you follow previous reviews (Gate 245). Has only one vegan option, but it's clearly marked and enough :)

One of the only vegan options in the terminal - Edit
The sushi gimbap is the only food item I’ve seen in the terminal labeled vegan. Don’t pay attention to the other commenter who said it is not located past security, because it is. It’s right next to Gate 245.

Vegan sushi - good option - Edit
The salad sushi roll was really good and cheap. The sauce seems to be mayo but they have soy sauce and chilli flakes available so all good. Thrilled for this recommendation as vegan options are nearly impossible at Incheon. Definitely the best option I came across. Healthy too.

One solid vegan option - Edit
Got the salad gimbap, which is a plate of 8 sushi rolls of raw veggies with rice. It came with a cup of miso soup. Didn’t know if mayonnaise-looking sauce was vegan, so ate it with soy sauce. The restaurant is in Terminal 2, by gate 245.

Couldn't find it - Edit
The happy cow app says it's "after security" but according to Naver Map it is in the public space of the airport. This is not located WITHIN the security section of the airport. I was really looking forward to eating it. I'm very annoyed.
