Best vegan chorizo - Edit
This place was a pleasant surprise. They have vegan spicy queso and chips and probably the best vegan chorizo I’ve ever had. They’ve recently added several vegan brunch items to the menu like huevos ranchero, chilaquiles, and Mexican poutine. Most of their regular menu items can be made vegan. I would definitely recommend this place!

Staff was friendly and attentive, despite being the only server on duty for lunch. She told us that one of the owners is vegan, which is why they want to offer vegan options. Other then the vegan queso with chips (appetizer), all other menu items would need modifications to be made vegan. For filling choices (for tacos, enchiladas, burritos, etc.), vegans can choose the sauteed veggies for soy chorizo. The only vegan cheese is the queso. Upon her recommendation, I got the enchiladas with mole sauce. There are two, so I got one with the chorizo and one with sauteed veggies. Ordered without cheese, without sour cream and sub vegan queso for the cheese. While it was tasty, it wasn't great. Definitely recommend the veggie filling over the chorizo, if only for the texture difference. Mole sauce was tasty, but overpowered all the other flavors. Would have been way better with vegan sour cream or guacamole. Husband got the vegetarian version (with cheese) of the same thing and enjoyed it way more.

They have 2 locations, the new one in the highlands on Bardstown Road and the original one on Frankfort Ave. They have a couple vegan options on their menu, including spicy vegan queso and vegan chorizo.

They’ve made their vegan queso an option on both restaurants menus. It’s gluten, oil, and soy free. It’s got a spicy kick that keeps you coming back!
Read moreSince the pandemic they have upped their carry out game and started offering items like the tomatillo salsa, black beans, and rice by the pint as well so you can dress up your own dinner choices at home. For instance I air fried some polenta and topped it with the vegan queso last night at my casa and it was fire.

No easier to eat vegan than any other Mexican place - Edit
I've been to this place a few times, it's cute and in a good location, but I've never been impressed with the food. It's surprisingly lacking in vegan options, not really anything different from other Mexican or Tex Mex restaurants, it's just trendier.

We love, love, love El Mundo. They have an awesome sauteed vegetable mix that's different from one visit to the next. You can order enchiladas, tamales, and burritos with the veggie mix and they're vegan. For vegan dishes, order the black beans. The "spicy beans" are vegetarian, but not vegan. The chili rellenos are ridiculous! It's a stuffed poblano pepper, so you can order it with the sauteed veggies and it's vegan. The guacamole is so very good.

Very busy - get there early if you don't want to wait.
Downstairs is counter service, if there's an empty table you can grab it.
