Perfect place in Estes Park! - Edit
We had the Chile en Nogada and as others hav reviewed it is delicious. We also had the Cantina Salad and it was bigger than I expected and had great flavors. I would order both again!

Not much vegan but what there is, is good. - Edit
My wife and I go there for one dish, Chile En Nogada, It is truly spectacular. There is also a salad which can be veganized. However the Chile En Nogada is worth the trip.

Somewhat limited options but delicious! - Edit
The HappyCow description is out of date - there isn't a separate vegan menu anymore but there are options clearly marked on the menu. The veggie enchiladas are delicious and very filling. Also thought it was cool that the wines on the drink menu are also labeled vegan or not - makes you trust that they really know what vegan means!

Great choice for vegan-friendly catering in Estes - Edit
Ed's event coordinator and staff did a great job setting up a buffet for us at The Barrel for a recent family celebration. We were able to substitute a vegan option for one of the meat choices, and all in our party commented on how great all the food was. Roasted seasonal vegetables, fajita peppers and onions, black beans, Spanish rice, guacamole/salsa and chips, pico, and Ed's vegan mole blanco sauce were a great hit (as were the non vegan options). They also accommodated my request for both wheat and corn tortillas in case we had gluten intolerant guests. We tried the plantains on a preview luncheon (there have been many positive comments on them). They were not our favorite, but they are certainly unique and fun to try.

Pros: Flexible on vegan options, Very thorough event planning, Great setup staff (AND they recycle items!)
Cons: Wish they'd had a vegan dessert option

Quality Mexican Food - Edit
Clearly marked–though limited–vegan options. Everything was surprisingly good and I’d come here again after visiting RMNP.

Delicious mole - Edit
Finally tried Ed’s Cantina after reading the reviews. I was a bit skeptical, but now I’m a believer. Very fresh food and three decent vegan options (enchiladas, tacos, and a poblano bowl). They have more or less the same ingredients but all were delicious.

It was fine! - Edit
Had the vegan enchiladas - they were alright, quite bland and nothing special. Service was under par. The salsa however was amazing! And the guacamole was very fresh. I won’t be visiting again but it was good to find a place with vegan options clearly listed.

Great Vegan enchiladas - Edit
I loved that all the vegan options are clearly marked. I ordered the vegan enchiladas and my mom ordered the chile en nogada. She loved hers and I loved mine. Also, their chips and homemade salsa is delicious.

Heavy on the salt. - Edit
It was a busy Friday evening, so I'll excuse an item from my dish being left off, but I can't excuse the excess salt in all the dishes and chips. I was happy to see more than one filling vegan option & appreciate the menu is clearly labeled. Overall my dish was tasty, but I'm not inclined to return when I'm in Estes again.

Best salsa I've ever eaten. The fried plantains were delicious as well. Vegan options easily listed on the menu and a small outdoor seating section.

Easy to order vegan - Edit
I really appreciated how straight forward the menu was on what is vegan and what’s not.
Read moreThe first visit I got the enchiladas which were vegetable filled and had two different homemade sauces on them. The sauces were cashew and butternut squash based. With this, don’t expect typical Mexican style you may be use to, but I still really enjoyed them.
The second visit I got the falafel taco. These had the same butternut squash sauce drizzled on top and overall I thought they were pretty good.
The salsa with the chips is really good, so make sure to get some of that!

Thank you, Ed! - Edit
We went for dinner and tried all three vegan entrees and they were all fresh, flavorful, and felt intentional - like someone had really thought out what would be a great meal instead of just subbing for a vegan option. The enchiladas were my favorite. Our toddler loved the plantain appetizer too. Filling without being heavy and greasy like Mexican sometimes is. Nice ambience with outdoor seating and the service was great too. They also have plant-based tenders on the kids menu. Would give 5 stars if it would let me!

Enjoyable Mexican style fare - Edit
Glad to find this little modern Mexican place in Estes Park with several clearly marked vegan options to choose from. We tried the jalapeño falafel tacos and the veggie enchiladas and both were good. We particularly enjoyed the cashew cream sauce. Would definitely eat here again - though, not the restaurant’s fault we were near a large, loud group and it was a bit hard to hear each other. Also, it’s a bit silly but as a former Texan I am not used to paying extra for things like chips and salsa or rice on the side of my entree. Still an enjoyable meal!

Flavorful Mexican options - Edit
We enjoyed all three of the vegan options on the menu: jalapeño-falafel tacos (moist inside and crunchy outside), mushroom/black bean enchiladas with cashew cream sauce and a green chili stuffed with the same mushroom/black bean filling. We were excited to have options to choose from and enjoyed the spicy flavors accompanied by refried beans and rice. Margaritas and beer are available to wash it all down. Nice spot for dinner!

I’m still hungry… - Edit
We ate here with some omni friends and they had something for everyone. The food was good but the portions were small on the vegan dishes. The meat dishes were more than they could eat and the prices were about the same. After a day hiking in RMNP I needed more food.
