Alright, sure would like a protein option

The last few years, EATS has been one of the few (maybe only) veg options at Truckee Thursdays for an actual meal. (sure miss Red Truck and SPICE!) Typically I remember they have a small menu with maybe one appetizer and one bowl. If I recall, last time I frequented them, they were serving up a tom kha gai -ish coconut soup with veggies and such. It was good but not amazing.

The vegan option omits the chicken add-on, which I've seen over the years is their usual setup. Sure would have liked something I could add-on instead like tofu or tempeh, that would make me way more excited to eat here on Thursdays. Their website and catering side does specifically call out veggie/vegan options and proteins, I wish they'd offer one at the truck (well, trailer, but you know).

Pros: There's a vegan option, They're out at Truckee Thursdays

Cons: No protein choice, Just one vegan option (but hey, it's a food truck), No regular location or hours
