Usually has a rotating variety of 2-3 different flavors of vegan ice cream made with soy and coconut cream as well as sorbet. Vegetarian sandwiches are listed on the menu and there are many vegan choices as well, including organic hummus and organic tofu for salads and sandwiches and a veggie dog. Vegan chips include Boulder chips and veggie straws. Open Mon-Sat 10:00am-9:00pm, Sun 10:00am-8:00pm.

Head Baker Vegan No Longer Vegan - Edit
There is a great Build Your Own sandwich where you can select Tofu. I was told the organic bread is vegan. They have run out of the tofu a few times I’ve been in but I’m obsessed with building a tofu, avocado, cucumber, carrot, spinach, and avocado sandwich, so I visit often.

Have to ask for no cheese on the vegetarian sandwiches (3 of them, or choose your own ingredients), two vegan icecream choices, and a chocolate vegan cupcake.

Tasting Spoons! - Edit
As a vegan, I've often seen the dairy-eating people trying tons of different flavours of ice cream on tiny spoons and felt a little jealous... if there are any options at all for me it's usually one sorbet.

The counter staff said they typically have 2-3 flavours of vegan ice cream made by Sweet Action ice cream (in Denver) and ice/sorbet varieties too. The selection changes all the time but the strawberry vegan is made with coconut cream and soy (but doesn't have that coconut-y taste) and is absolutely perfect -- you could never tell it was vegan. The carrot cake caramel and coffee donut are interesting too.
One downside (or upside) is that the scoops are more like two scoops... I don't like to eat that much sugar/fat in one sitting but others might find they're just perfect. Next time I'll get a kiddie scoop. Unless they have that strawberry again.... lol
I haven't tried the food options here yet but they do have several vegan options like humus, salads, tofu and veggie dogs. Cute, funky little cafe setting.
