Love their cakes! - Edit
This is my go-to cafe in Amberg for Kaffee und Kuchen. They always have at least a couple of vegan cakes/pies to choose from and sometimes there are some really creative ones like black sesame cake with kiwi. The staff are great and also speak English, so it's easy to order.
