Limited but Beautiful - Edit
Demetris is right on the water, and the outdoor seating is absolutely beautiful (minus the occasional train that comes through). The vegan options are limited, but there's a clearly labeled vegan burger and a few other options that can be modified. I opted for the burger, and it was decent. Nothing extraordinary, but a solid choice when dining with non-vegan people.

Good vegan options for Edmonds - Edit
Downtown Edmonds is woefully lacking in Vegan options for eating out. Demetris isn’t where I would go to eat by myself, but if you’re hungry in Edmonds or trying to find a place to eat with a mixed crowed it’s an excellent choice.

Limited -but quality- vegan options - Edit
When I starting going through the menu I was worried I'd be stuck with just a salad and fries, but I was pleasantly surprised by the Roasted Cauliflower Steak with a Beet Sauce and Lemon Arugula with Quinoa. The Brussels Sprouts were also really good (with the parmesan removed) I did also see a Beyond Burger option that I'll try next time. So, limited options, but there's at least an effort to have some quality plant options.
