Great food truck! - Edit
This food truck seems to have the only vegan options from all that are there! They have a big menu, two of the dishes are marked vegan but after asking, they confirmed that most of the vegetarian are actually vegan! I had the Pho and the Avocado roll, both really delicious!

Read moreWe ordered vegetarian tofu fried rice (without egg), eggplant tofu & the (biggest!) fresh tofu spring rolls I’ve ever seen.
The eggplant tofu was hands down the BEST I’ve ever had! Everything is made to order which is why it takes longer than most. ITS WORTH THE WAIT!
The fried rice was pretty dry but had good flavor. The spring rolls w/ spicy peanut sauce were delicious.

Food truck with a large menu - Edit
The food here is good and the menu is large for vegetarians/vegans. I have never seen a food truck with a large menu for non-vegetarians and vegetarian/vegan.
Read moreIt is good and bad at the same time. It is good that I can select more than 1 vegan item. But it is bad for the wait to get the order. The best thing is to come when they just opened. The wait will not be too long. If you come later the wait will be longer, like 30 mins for your order. I think this is due to their large menu.
But we do enjoyed what we ordered: Basil Eggplant Tofu plate, Lemongrass tofu plate, and Tofu Spring roll with peanut sauce. I make sure they don’t put fish sauce in it. Staff was very nice.
Pros: Lots of vegan options , Tasty, Easy access and park
Cons: Expensive , Wait can be long
