Limited options but open to modify

In this little village it might be difficult to find vegan options, but look no more. At Columbine Bar & Grill the have the impossible burger on the menu.
I needed something more fresh but still some protein and so I asked if I could simply combine a salad with a burger patty and it was no problem.
Totally hit the spot on this hot summer night. Would recommend this as a great option when not much is around!
Staff were super friendly, there is outside seating and good beer as well.

Pros: Options to mix and match, Friendly staff, A great option for a small village
