Really an experience. Beautiful restaurant with focus on the experience. Roll your own sushi, with different kind of toppings. Also some less obvious ingredients like beans, cheese or mint. Also different kinds of tea, hot and cold, available. Not cheap, but good value for the experience.

The vegan set was ok. The fillings for sushi were not-that-special (avokado, cucumber, cold beans, some leaves, pickled stuff etc) but because you get unlimited hot/cold tea, I wasn't left hungry. The experience was kind of fun but I would not go there again or if I wanted good food.

GgThey describe it as an experience. You get to choose 6 to 8 "fillings" and then get to roll your own sushi. There will be one mat with nori and sushi rice in front of you, and 3 more in a wooden box. There are also options to learn how to make tea the traditional way.
Read moreFor vegans, there is only one choice, and that is the vegan menu. Where they leave out all fish and dairy, and instead of tempura, you get tea.
For vegetarians, there are more options. The tempura (when I went there on 27-12-2023) was broccoli, pumpkin, and mushrooms and thus vegetarian friendly. They probably use egg in the batter so they don't serve it to vegans.
Then you get the choice out of a couple of vegetables, natto, cheeses, and grilled egg.
They said they just changed the menu, so this should be what they serve for a while.
It is a fun experience but probably more so with family or friends.
I'm not sure if you can switch out anything on the vegan menu for other vegetables. I hate bell peppers, so I didn't try the vegan menu. I had already called the staff a few times and got confirmation that the tempura was vegetarian, so I built my own menu instead of calling once again to switch out stuff on the vegan menu.
So again, for vegans, there is only one choice. It's up to you if it is enough and the experience fun enough, or if you'd rather go elsewhere.

Do come here if you are in Kanazawa. There are so many choices for fillings or you can have the vegan set to make it easier. They also provide you with a tea ceremony. We did sake tasting as well. It’s also fun to roll your own temaki. We were provided with three nori rolls with rice and added our own fillings. We had vegetable tempura as a side. All delicious and wonderful.

Great fun - roll your own Sushi - Edit
We came here because they do veggie and vegan options. We ate as a family of five. My daughter is vegetarian and this gave an option for everybody. It was great fun with make your own sushi and a sake shot board. Would happily come here again.

Coil was a great experience and the vegan sushi comes with your own tea experience where a member of staff shows you how to make your own tea and you can then do it and choose a flavour. The sushi was plentiful and tasty. A great option, especially as it's difficult to find vegan sushi anywhere in Japan.

Best experience in Kanazawa - Edit
Had a great time there rolling our own Temaki. The rice is already spread on the Nori, so it really isn't a hassle.

The place itself is a beautiful mix of traditional and modern Japan.
All in all a time well spent and left us completely satisfied.

They have a vegan set which includes 4 sheets of rice and 6 different toppings. The set menu also includes the self tea ceremony which is quite fun. Overall a nice experience but it’s not cheap so be prepared.

This was a novelty way to eat dinner, really cool set up and the spices and condiments were delicious. Unfortunately there is no vegan protein and the tempura isn’t vegan, so it’s limited but there aren’t many other options in Kanazawa! The vegan set is clearly labelled on the menu and you can order in English.

The make your own sushi comes with tempura and when I explained that I was vegetarian, they were happy to make me vegetable tempura. The whole experience was very fun!

My husband found this place as a back-up after our original dinner plans fell through. Let me just say I’m not upset that we ended up here. This whole experience was SO FUN! The vegan set comes with six fillings and three seasonings that we rolled ourselves into hosomaki sushi (which is a lot more difficult than it looks!). The set also came with a “do it yourself” tea ceremony that involved choosing and brewing our own artisanal Japanese tea. We added on a sake flight for fun, and that was also excellent. This place was such a unique way of enjoying a Japanese dinner, and would be amazing with a group of friends!
