Able to make vegan food - Edit
Able to make the fajitas vegan by changing the beans to black beans and rice to white rice which was good! I can tell there is cross contamination because a little piece of meat was in my fajitas, so be aware.

The restaurant staff seem to lack knowledge in the area of what veganism is. I told our server from the very beginning that I was vegan and then proceeded to order my meal. We started with guacamole (of which on the website says that it’s free, it’s not, it’s in fact $4.99) it came to the table and had cheese on it! It didn’t look fresh and had an odd sheen to it so I simply didn’t eat it. When it came time to order my entree, I order the Verde mole and I asked the server to make it vegan and told her that I had an allergy and she said that they could do that by simply removing the cheese that it would normally be topped with. However, once my food arrived it was CHICKEN !!?!?!? I was horrified but kept my cool and asked if that was in fact chicken and was told “well yes, each of our moles have chicken” , we then went back and forth to figure out a solution. They were very courteous in coming up with an alternative. Of which my new choices were veggie fajitas or the mole without the chicken , with veggies and white rice and black beans. I hope this helps! This was most likely a case of user error on my part, I pushed my responsibilities onto others without knowing their baseline knowledge of what this lifestyle is and what it entails.

Staff was super knowledgeable at pointing out several vegan options. They even said they’d swap out the rice (made with chicken stock) and beans (made with lard) for white rice and black beans, which were both seasoned and not just plain old white rice and canned black beans. They are willing to veganize most dishes. I got a veggie burrito (hold the cheese and crema) smothered in green salsa. It was delicious and will definitely go back.
