Hotel breakfast that recognizes vegans - Edit
This was the one hotel we could find that clearly supported vegans with their included breakfast. They have baked items including cakes and fruit tarts that were labeled vegan. They have oat milk for the coffee and cereal upon our request. Typically one of the hot food trays has kale or peas. Service was warm and responsive.

Roman Roof-Garden Revelry - Edit
The fact that the breakfast room is a roof garden/terrace already got this place of to flyer, the food just sent it over the top. Continental breakfast at European hotels are usually quite formulaic, but here it was anything but as the range of vegan items was truly impressive and even unique; the carrot roulade was a prime example of this. It was on the sweet side of things that this restaurant truly excelled. I nearly wept with joy when not only did I spy vegan croissants (which were exceptional), but there were also homemade oat biscuits, TWO types of fruit tart AND a whole, massive cake that I could plough into at my hearts content.
