The portobello burrito bowl is fully vegan without required substitutions. The chimichanga can be made vegan with substituting beans and taking off the cheese. Our server was knowledgeable of vegan requirements and was happy to accommodate substitutions.

Please take it off! Do you not be able to accommodate a simple request like hold the cheese is not my idea of accommodating vegans or having vegan options!
The Pico de Gallo was EXCELLENT!! Great view of the river. Friendly service. Could make vegan substitutions - no issues. Had a wonderful visit from a hummingbird well eating outside. The plants are beautiful here. They’re vegan

Very lackluster food and service. Worst in Estes that I’ve experienced. One person from our table got so hungry they had to leave because the service was so bad and the food took so long. I would not come back. I’m not sure how they are still open as it is very dirty. They need to make massive changes in order to stay open.
We waited 20 minutes after we were seated (I’m not joking, literally 20 minutes) for someone to come and take our drink order. There was a group of 6 waiters standing 20 feet from our table just hanging out the entire time. When I asked to sub black beans instead of refried in my burrito the waiter told me that they couldn’t do that and acted very confused. Eventually we worked it out but it was just a frustrating experience overall. Don’t recommend, there’s much better places to eat in Estes Park.
Plenty of options, service and taste lacking - Edit
I was pleasantly surprised to see veg options labeled on the menu, as well as the substitutions that could be made (beans or rice for meat, for example). The menu was expansive and had plenty of options. However, the service was poor- we had to ask for silverware for our entire table after our food arrived, we got no drink refills, and the server rarely checked on us. In addition, the food was bland and did not meet my expectations for Mexican food. Would I eat here in a pinch? Yes. Would this be my first choice? Absolutely not.
