Great vegan options - Edit
Cantina Laredo offers a separate vegan/vegetarian menu upon request. Their complimentary chips and salsa are fantastic. I got the impossible tacos which included vegan cheese, onion, tomato, and fresh avocado along with a generous helping of rice and beans. Definitely recommend if you're looking for a yummy sit-down option at the mall.

Always a good vegan meal! - Edit
Whenever we are in Bloomington we often stop here since they have a vegan menu. We have never had a bad meal. Tonight we needed to get it “to go” and the portions were generous and so tasty!

There is separate vegan menu with 6 entrées to choose from. Note that you have to ask for the vegan menu – servers will not automatically give it to you nor ask if you want to see it.

I had the Fajitas de Vegetales (from the vegan menu) which was delivered in under 10 minutes and sizzling loudly. It tasted excellent and was beautiful in appearance. It was fun to build each fajita differently using the 4 warm/covered tortillas.

Few vegan options, but tasty - Edit
I only saw 3 vegan options on the menu, no separate menu. One was deluxe guacamole, and the other two were based on Impossible Meat, which I don't usually eat because it's GMO. That said, I made an exception and ordered the Impossible tacos, which were delicious. The 2 taco lunch is more than enough food.

Excellent variety and flavor - Edit
A lot of places are placating vegans, making a feeble  attempt by removing cheese here, removing a chicken breast there. Not this place. They have a well thought out vegan menu. The food was presented great and most importantly, the food had FLAVOR!

Delicious, fresh, whole foods - No processed fake meats! - Edit
Excellent option for MOA visitors - the only one I could find that had healthy vegan options instead of junk food: processed fake meats and cheeses. We had the chips/salsa, nachos, fajitas, and Tajín watermelon margaritas. Everything was delicious and not the typical Minnesota fajitas and nachos. The staff were great - the chef took the time to visit tables and chat with with guests. Their salsa is made fresh daily and is the best I’ve tasted in a long time. I’d rather set myself on fire than go to MOA, but sometimes it’s necessary. I plan to order delivery from here often and when I do need to visit the MOA, Cantina Laredo will be my pit stop for comfort.

Very Nice Vegan Menu - Edit
My wife and I met non-vegan friends here for dinner based on our understanding that we could order vegan food and we were NOT disappointed. We did ask for the vegan menu (a vegetarian menu is printed on the other side of it). We ordered guacamole and the server came out and told us that they had to remake it since the poured queso on it by mistake so kudos to the staff for catching it! I ordered the vegan burrito and my wife ordered the fajitas and both were very good. My burrito was a very nice size and there was vegan rice and black beans as sides so there was plenty of food. My wife could barely finish her meal. The service was very good. If you are looking for a restaurant in the Mall of America with vegan options, we would definitely recommend Cantina Laredo!

Went to this place inside Mall of America and it was the best restaurant of our whole trip. A lot of vegan and vegetarian options, but you have to ask for the menu. The veggie fajitas were absolutely amazing! Chips and salsa, so good. We also got the avocado/poblano/artichoke enchiladas - they were mostly avocado and the sauce, rice, beans were the best I’ve had. Wish I didn’t live 5 hours from this place because I need those fajitas again!

I love that they have a pretty good sized vegan menu. It's not posted online and you have to ask for it, so I took a picture. The enchiladas, chips and salsa are great. Salsa may be the best I've ever had. My waiter said it is housemade.

Vegan menu option at MOA - Edit
Since we wanted a restaurant rather than a food court vibe we went to Cantina Laredo at the Mall of America. Also, I read here on Happy Cow that they have a vegan menu. Luckily I knew to ask for the separate menu, since it wasn’t mentioned as an option. I had the enchiladas, which had artichokes, poblano peppers, avocado, and a verde sauce on top with roasted red peppers to garnish. Except for the avocado, the ingredients were not fresh, but still pretty good. I wondered if the salsa that came with the chips was Frontera brand? Not a fan of the salsa. I kept wishing they had a vegan queso. The chips were light, crisp and addictive. My favorite part of the dish was the black beans. They actually seemed house made, not overly salty, and very flavorful. I would return just for the beans and chips (and an order of table made guacamole which I didn’t get this time.)The service was polite, though everyone seemed over extended.

We enjoyed having a full service experience inside the mall. There is a separate vegan menu and separate vegetarian menu as well. They bring house chips and salsa to start and their salsa is wonderful! The two of us (me-vegan, my boyfriend omni) ordered table side guacamole and Enchilades De Aquacate and split them. We even had left overs. The first order of enchiladas came with cheese on the beans but they quickly fixed it- so just be sure to say you are vegan.

Love the vegan menu! - Edit
I asked for the vegan menu and had a hard time choosing between tacos, the burrito, fajitas & enchiladas. I went with the enchiladas which were great, and they came out super fast. The tomatillo sauce has nice heat, and the black beans were cooked perfectly. The guacamole is a little chunky, which is how I prefer it but note that they’ll ask you if you want it then not tell you it’s $6 (different from the table side guac).
