Great bakery with vegan sweets!

They offer vegan cinnamon, apple and poppyseed rolls. Also vegan chocolate muffins. Regional and fair production, therefore definitely higher price range. Also good coffee!

Great bakery with regional ingredients

Most of their breads are spelt based and use sourdough. The loaves, rolls and pastries are on the pricier side but of very high quality and of excellent craftsmanship. No ingredients are included that shouldn't be in a bread.

My favourite loaf is "Adam Apfel", a round spelt bread with a rye sourdough base and some apple juice. It stays fresh for a long time (wrapped in a linen towel!). I find it convenient that the breads come in two sizes for smaller or bigger households. All bread loaves except "Nora Nuss" are vegan. For a quick vegan snack to stay or to go they offer hummus, lettuce and dried tomato-filled buns.
All vegan pastries and rolls/buns are clearly marked as vegan. A seasonal specialty is the Krapfen (a kind of jam filled donut) right now - it is sold both traditionally and vegan so make sure to explicitly say you want the vegan one! From the soft pillowy dough to the tangy-sweet apricot jam filling it's pure perfection!
