When I was there, the only vegan option was plain pretzels. Located upstairs inside central train station at track 9.

Freshly baked pretzels, two sandwiches and a hot dog - Edit
You can always be sure to get a good pretzel from these outlets, often even warm from the oven. The variants with seeds on top are even better, though a little messy to eat. The avocado sandwich, though, didn't quite convince me though I've heard other opinions. This outlet is conveniently located at the station overpass.

Now two vegan sandwiches - Edit
They offer vegan pretzels, avocado sandwich and since short time the planted curry sandwich! I think the planted curry sandwich is delicious and im pretty happy they kept it in the menue!! Now they also have a vegetarian hot-dog, if you choose mustard or ketchup as sauce it is vegan! This month, october 2021, they also have two new vegan sandwiches, one with gemüsestäbchen and one with Radieschen.
