There are plenty of vegan options on their menu they even have a lunch specials menu w/ vegan options.
Read moreI ordered the miso soup, green goddess roll and the and avo kaluna off the lunch menu these were very good! I am alway leery of these kind of things and this was a great surprise in quality and taste . We also ordered the tofu lettuce wraps which were also very good.
The overall quality and experience were great . The staff is super nice and the restaurant has really calm atmosphere. Definitely recommend.

Ok so blue sushi has so many vegan rolls it's unbelievable! And they always have vegan rolls on the happy hour and lunch specials. Apparently on Tuesday vegan rolls are on sale all day! I would highly recommend eating here.

Outstanding vegan options - Edit
I was amazed at the number of vegan options here. Shared the tofu lettuce wraps with a friend who isn't vegan and we both loved them. The cowgirl sushi is to die for. We went for lunch and it wasn't crowded and the space is beautiful.

Vegan options in the center of Summit shopping center. - Edit
There were a LOT of vegan items on the menu. People who are and aren't vegan can find good stuff here. A nice sake menu as well.
Read moreWe sat outside on the back patio and split four of the vegan sushi rolls. Cowgirl, Thai hippie, Up in smoke and Black dragon. So good I forgot to take a picture! They looked as delicious as they tasted.
A flight of cloudy sake and we were good. No room for the dessert menu at all.

SO MANY OPTIONS!!!! - Edit
VEGAN SUSHI HEAVEN!!! Gone are the days of boring veggie rolls! This place has vegan tuna, eel, and shrimp! They also 3 different kinds of vegan caviar and tofu! There's also plenty of sauces and dressings that are vegan including a vegan cream cheese! There are even a couple vegan desserts, mochi and a chocolate torte! The menu is covered in vegan labels! Also, this of course didn't make me eat it, but it seems they've made an effort to make the fish they serve sourced better than most places, as they have labels for their more sustainable options and they list where all their fish come from. This doesn't change my choices but it does make me feel better bringing my non vegan friends here! #Veganuary
