Good ption in downtown Bellingham - Edit
The Cajun-inspired restaurant is located in a nice old building at the intersection of Bay and Holly, and is one of the better options in Bellingham. Vegan options clearly indicated on the menu. Brunch and dinner menu both contain vegan options. I've tried the vegan jambalaya a few times now - fairly good, though sometimes it is drier than other times. Vegan hash is decent enough too.

Vegan Cajun/Southern options! - Edit
Wow! I was surprised to see that this restaurant had vegan options! The jambalaya was really tasty and fresh! The red beans and rice were seasoned perfectly and the collard greens were briney, garlicy and delicious. Highly recommend! They also have a vegan brunch item on Saturdays and Sundays.
